Bruschetta with Adriatic Queen hake a`la cod and roasted peppers

Ingredients

• 4 slices of quality bread
• 1 can Adriatic Queen hake in oil (drained)
• 150 g roasted peppers (can also be canned, drained and cut into strips)
• 2 tablespoons extra virgin olive oil
• 1 garlic clove (optional)

Preparation

1. Toast or broil the bread slices on a pan or in the oven until they are nicely golden and crispy.
2. If you like the aroma of garlic, cut a garlic clove in half and rub it on warm toasted slices of bread.
3. This will give the bread a mild but distinctive garlic flavor.
4. Drain the hake from the oil and carefully spread it over each toasted piece of bread.
5. Place strips of roasted peppers on top of the hake.
6. If the peppers are canned, drain them well before adding.
7. Brush or lightly drizzle olive oil over the bruschetta for extra flavor and juiciness.
8. Serve immediately while the bread is still crispy.
9. If desired, you can add a little fresh parsley or ground black pepper for extra flavor.
